Mushroom Philly Sandwich



  • 2 lbs Oyster Mushrooms (torn into strips)
  • 1 Tlbs Beef bouillon
  • 2 tsp Worcestershire sauce
  • 1 Tlbs Seven Spice
  • 1/4 tsp salt
  • 1/4 tsp dark soy sauce
  • 1/4 cup beef broth (low sodium) 
Sandwich Ingredients:
  • 4 Bolillos rolls or similar bread for sandwiches
  • 1+1 tsp butter
  • 1 Onion Sliced
  • 1 Bell Pepper Sliced
  • 1 jalapeño seeded and sliced (optional for heat)
  • Tomato diced
  • Lettuce shredded
  • Cheddar shredded
  • Mayo


2hr-24hr in advance:

Boil Mushrooms and beef bouillon in water for 20 min. (can omit beef bouillon or substitute vegetable bouillon for vegan)

Drain and let mushrooms cool.

In a bag or container with lid: Combine the rest of the Marinade Ingredients above.

Add mushrooms to the marinade and let sit for at least 2-3 hours but really best if done day before for best flavor.

Sammy Creation:

Drain the mushrooms from the marinade.

Fry the mushrooms until they start to brown slightly, add 1 teaspoon butter and continue to fry until browning to desired consistency.

In a separate pan, sauté the onion, bell pepper, and jalapeño together on medium heat with the butter until caramelized.

Cut (if needed) and toast the bread, spread mayo.

Chop the cooked mushrooms and place on bread, add cheese and some of the cooked bell peppers/onions mix, then little tomato and lettuce.
